Vegan chickpea pear pancakes

I love pancakes! Today is my day off so I usually spend a little more time in the kitchen. I have been wanting to try and make a chickpea pancake so thats what I did today. They are super savory and filling because of the protein from the chickpeas. With the caramelized pears on top it makes a perfect combo. I always like to have music playing when I’m cooking. The Lumineers just came out with a new LP called, Cleopatra. Give it a listen!

Ingredients:

Pancakes

  • 1/2 a banana
  • 3/4 cup oat flour (ground oats)
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 3/4 cup chickpeas (drained and rinsed)
  • 3/4 cup almond milk
  • pinch of sea salt

Caramelized pears

  • 2 pears (chopped)
  • 1 tbls coconut oil
  • pinch of sea salt
  • sprinkle of cinnamon

 

  1. Heat coconut oil in medium pan, add pears, salt, and cinnamon. Saute for 3-4 minutes until caramelized. Set aside.
  2. Add all of your pancake ingredients to a blender or food processor. Blend until smooth scraping the sides down. The batter should be slightly thick but if you prefer thinner pancakes feel free to add more almond milk.
  3. Heat coconut oil in medium pan cook pancakes for 3-5 minutes on each side they get nice and crispy so be patient they take a little longer than your average pancake. You should get about 4-5!
  4. Top with your pears and maple syrup, enjoy!
